Earlier this week I posted about some baking I’d done for my work pals.
As so many people asked, here it is. The all too easy recipe you may regret discovering: white chocolate key lime slice. It’s my version of a few different recipes you’ll find on Pinterest if you search for limes and condensed milk!
Melt 1/3 cup butter
Mix in ¼ cup caster sugar with a fork to smooth/remove lumps
Crush 1 ¼ cup biscuits {I used digestives as they’re a bit more textural, US friends could probably use probably Graham crackers}
Add to butter/caster sugar mix & spread into an 8×8” pan lined with baking paper
Bake for 4-6 minutes at 180 C {350F} until edges start to brown
If you touch it {aside from burning your fingers!} it will still feel soft to the touch but will firm up as it cools. Set aside on a wire rack to cool.
In a heavy saucepan mix 1 tin of condensed milk {I used the skim version because this recipe probably has enough full fat in it already J} and 3 cups of good white cooking chocolate, mixing continually until the chocolate melts. You don’t want it to heat up, just to get all the chocolate lumps smooth.
Mix 1 tbsp lime zest and ¼ cup of freshly squeezed lime juice through the condensed milk/white chocolate mixture then pour over biscuit base.
Cover and refrigerate overnight.
{Try not to uncover and eat the edges off … you know just to tidy them up!}
Anything I might do next time? Increase the biscuit base by a third.
I think it’s important to note here that when you slice it, the calories stick to the knife and fall out. No, really, they do!
