Tasty Tuesday {super easy salted caramel sauce}

So, Tuesday kind of snuck up on me. Again. How does that happen?

This working full-time single mumma gig sure is a busy one. Let’s hope house hunting on Saturday was our last for the foreseeable future. I put an application in for a house yesterday, so everyone cross their paws please … or you might have 4 house guests! Work has also been insanely busy.

That’s my excuse for this week. There’s been baking in our home, but my old favourites – with a twist. What’s the twist you ask? Love Bug told me she wanted pink otto for dinner. Otto is risotto. Pink? Hmmmm …  so I made my one pot baked risotto: with beetroot, parsnip and zucchini. Thanks mother nature for that splash of girlie colour.

Now to this week’s recipe … but only if you promise not to judge me?

This is too easy and a total cheat of a recipe. But oh. so. delicious. Pour it warm over vanilla bean ice cream, a plain butter cake or eat it with a spoon.

Okay, maybe don’t do the last one. Unless you’re related to a dentist so you get free treatment once the sugar eats your teeth.

Or maybe do the last one. Just not very often.

I’ve been hiding this one for a while, and have only fessed up to my friend Mel about the ingredients in this one. She’s a foodie, but also a busy mumma. With a salted caramel addiction. Who quite likes salted caramel. Sometimes we girls gotta let each other in on little secrets, no?

Okay, are you ready for this complex kitchen creation?

Melt a little butter in a saucepan {just enough to coat the pan} then unwrap 2 packets of Werther’s original chewy caramels {minus the few you have to quality test of course}, drop them in the saucepan and stir. Once they are melted, grind in your favourite salt to taste.

I told you. Totally cheating.

But once you pour that warm sauce over the cake and serve it with some double thick cream, or just bury your vanilla bean ice cream in it, you’ll forget all about the origin of it! And I won’t tell anyone if you don’t.

Now, go make that appointment with your dentist.
