Tasty Tuesday {Love Bug slice}

I handed Love Bug a muesli slice in the car the other day {organic, but still pre-packaged} and after she took a bite she asked can we make these mumma? She had a point.

So that’s what we did. For winging it totally, these turned out pretty well. I think I might add a little something more {yoghurt topping/dark chocolate chips for me maybe!} but we are loving this so much that it’s almost gone.

As sometimes happens with these things, I wasn’t really planning for this to be a Tasty Tuesday feature, so photos are scant {read: we only have one, after we decided how good it was}. I’m sure this recipe will be an evolving critter, so next time I’ll be sure to take more photos.

What do I need?
1/4 cup cashews, smashed
1/4 cup sultanas
3/4 cup quinoa flakes {just like oats, we now use these gluten-free gems in everything!} 1/2 cup rice flour
1 large teaspoon Maca powder
1 tablespoon cashew butter
1 heaped tablespoon organic honey
2 tablespoons apple and cinnamon puree {I buy lots of apples when they’re reasonably priced at the farmers market and steam and puree them with some cinnamon so I always have some handy}
1/2 cup puffed millet
1 small apple, grated
Water, to be added as needed

Now what do I do with it?
Pre heat oven to 180*C {350*F}.

Combine all ingredients together then decide if you need to add water. You want the mixture to be doughy and sticky. I added a couple of tablespoons of water.

Pour into baking tray and press down firmly. Cook for 18 minutes. Check that it is still spongy to the touch but not soft. It may need a few extra minutes. The final slice will have a slightly chewy consistency so you want it to be soft rather than crunchy.

Love Bug sliceRemove from oven and let cool completely before slicing. Keep in airtight container. Ours are in the pantry, but it’s cold wintery weather here right now so if you’re somewhere warmer maybe keep it in the fridge!

Great idea Love Bug! Apples don’t fall far from trees, do they?
