Tasty Tuesday {cookies so good even Cookie Monster wants some}

Say it like Cookie Monster: hmmmm coooooookies!

I’m not certain, but Cookie Monster’s may have been filled with sugar. Quite unlike these. They may have also contained gluten. Quite unlike these. They probably weren’t vegan either. They may not be all of those things, but these are still very tasty coooooookies.

Other from swapping out the Truvia for one tablespoon of apple puree with cinnamon, leaving out the baking spray and instead just laying baking paper over my pan, and the addition of a drizzle of chocolate at the end, I followed the recipe to the letter.

So why did I make a second batch? My Love Bug sous chef isn’t a fan of chocolate. Not even a drizzle {still confounds me!} and nor is she a fan of the yukky orange bits mumma! So this is what I did for her batch, which yields around 16 cookies, at approximately 60 calories per cookie.

What do I need?
2 very ripe bananas
1/3 mango {or you could use pear/peach/apricot/plum – any soft fruit}
1 tablespoon of chia seeds
1 tablespoon of smashed pistachio kernels
1 tablespoon of chopped dried cranberries {Love Bug is having a thing with them at the moment – she loves them!}
1 tablespoon of puree apple with cinnamon
2 tablespoons of raw unsweetened coconut + extra for rolling them in

½ teaspoon of vanilla
1/3 cup coconut flour {needed slightly more than the original recipe because the mango and puree apple made this version a wetter mixture}
¼ cup flax meal {ground flax}

So now what do I do with it?
Pre heat oven to 180*C {350*F}. Put your extra coconut into a bowl ready for coating your cookies. Pop all other ingredients into a bowl and mash together with a fork. Roll into soup spoon sized balls, coat them in coconut and place on a cookie tray lined with baking paper. Flatten slightly with a fork. Sprinkle a little extra coconut over the top and bake for 17-18 minutes. Allow to cool then store in the fridge in an airtight container.

Love Bug cookies 

The Love Bug version look very Christmassy with the green pistachios and red cranberries. Gift idea for gluten-free friends maybe?

For the chocolate drizzle on the mumma version: Add ¼ cup dark chocolate {I broke up a block of dairy free raw dark chocolate because I wanted to make this one dairy free; you can use any dark chocolate} to ½ teaspoon of coconut oil then microwave for approx 30 seconds and stir to combine. You may need a little longer depending on the strength of your microwave.

Gluten free, dairy free, refined sugar free, raw, grain free, vegan, paleo, egg free. Tasty!
