You know the scene. You’re standing in front of your pantry, hankering for a snack with flavour but it all seems rather bare. Until you look a little closer and get a little nuts creative.
There are a few things in there which might work if I throw them together. What have I got to lose? Apologies for the shortage of photos. I didn’t set out for these to be a Tasty Tuesday feature. Rookie mistake. They are delish!
What do you need?
½ cup raw cashews
½ cup raw macadamias
¼ cup raw hazelnuts {that’s all we had left, next time I’ll add ½ cup}
½ cup oats {if you’re going for gluten-free, leave out the oats and increase nut amounts}
¼ cup dried cranberries
¼ cup organic coconut oil
¼ cup organic maple syrup
2 tablespoons of desiccated organic coconut {plus extra to roll your treats in}
Okay, now what do you do with it?
Put all nuts into food processor or blender and pulverize until you have a fine powder. Once done, transfer to a large bowl and add all other ingredients, setting aside your extra coconut in a shallow bowl. Mix ingredients well – I did this with my hands to make sure they were really well combined. Roll into inch round balls {keeping an eye on your sous chef – mine was eating the mixture straight out of the bowl!} then roll in your extra coconut.
Store in an airtight container in the fridge. I can’t vouch for longer than 4 days because, well: delish!
