Love Bug seriously likes banana bread. Every time we’re at the farmers’ market and go passed the stall with the fruit loaded bread {let’s be honest: bread is stretching it, call a cake a cake!} she smiles sweetly at the vendor and immediately upon finishing the sample, wants to turn and walk by again!
That’s okay, but most banana breads are glutenous and filled with sugar. Until now. I have shared a banana bread recipe before, but I’ve got to tell you, this one is an absolute winner! Unsuspecting people {aka the girls I work with} were amazed it was both gluten and refined sugar-free.
The Merrymaker Sisters are to thank for this recipe. It is dense, rich {our bananas were super duper ripe}, crunchy thanks to the walnuts, and oh-so moreish! The kids loved it. I used coconut oil and added the raw honey. Oh, and I drizzled some raw chocolate over one half, just to see how it tasted. Yummo!
In all, a super easy to make, utterly de-lish recipe. This one will go onto regular rotation.
Banana bread (cake). Yum!
