If we’re friends, or you just know me from my blog or my socials, you’ll know I’m vegan and I’m very bloody worried about the climate, what we’re doing to the planet and the future we are leaving our children/grandchildren, nieces and nephews/children of our friends {by looking at it that way, we’re including everyone – not just those of us who are parents!}.

The simplest and most immediate thing we can do as individuals to have an effect on climate change {which, to be honest, can feel insanely overwhelming most days!} is to stop eating animals and animal products.

No Meat May sets the challenge to each of us to go a month without meat. This is easy in our home because I’ve been vegan for almost 4 years and vegetarian for about 5 before that. A lot of people I know, however, wonder what on earth they will eat if they aren’t eating meat and dairy. So I decided to share 1 recipe every day for the month.

I was going to call this post versatile pizza. But I want you to come back tomorrow 😉 

Whether you make your pizza bases from dough, cauliflower, sweet potato or quinoa. Whether you buy it from the supermarket or your favourite market providore. Whether you make your own sauce or pick up a jar from the store. Whether you’re a layer it on kind of topper or the more keep it simple variety. Whether you like to top yours with rocket or another choice of fresh green veggies, or you’re strictly all toppings must be cooked in the oven.

It doesn’t matter what kind of pizza devourer you are, there’s a pizza option for you. If I’m low on time, I buy gluten-free bases from a guy at our local farmers’ market. If time is on my side I will get more adventurous with the base, my favourite being cauliflower. I’m all about a little sauce, topped with a good mix of whatever roast veggies we have laying around, an extra drizzle of olive oil, some of this vegan fetta {unless I’ve eaten it all straight out of the jar with a spoon!} and a splash of Arlingtons Simply Vegan Pesto, some rocket and ground pepper.

Love Bug is more your margherita girl, although she does love a pea pizza!
