If we’re friends, or you just know me from my blog or my socials, you’ll know I’m vegan and I’m very bloody worried about the climate, what we’re doing to the planet and the future we are leaving our children/grandchildren, nieces and nephews/children of our friends {by looking at it that way, we’re including everyone – not just those of us who are parents!}.

The simplest and most immediate thing we can do as individuals to have an effect on climate change {which, to be honest, can feel insanely overwhelming most days!} is to stop eating animals and animal products.

No Meat May sets the challenge to each of us to go a month without meat. This is easy in our home because I’ve been vegan for almost 4 years and vegetarian for about 5 before that. A lot of people I know, however, wonder what on earth they will eat if they aren’t eating meat and dairy. So I decided to share 1 recipe every day for the month.

Love Bug isn’t well. She’s just got a cold, but this week in Australia NAPLAN testing is being undertaken across the public school system. So I’ve been taking her to school for the tests {2 yesterday, 1 today and 1 tomorrow} then bringing her home again. She’s a wonderful patient {and has two super gorgeous furry nurses} but it’s still meant less time for meal prep {more time reconfiguring the couch to a bed!} and a desire for things that are comforting and slide down easily when you’ve got a sore throat. 

What’s simple and quick? A big warm bowl of spaghetti {gluten free in our home – we love the San Remo brand of gluten free pastas *not sponsored*} tossed simply in garlic {apparently helpful in reducing common cold symptoms and duration} and olive oil. Here’s a recipe from My Darling Vegan.

You can toss in anything you like, or you can enjoy it as is. We tear up some rocket to stir through, and I’ll sprinkle some chilli flakes on mine. Simple. Quick. Satisfying for everyone.
