Tasty Tuesday {date, coconut and maca cookie}

When I said to Love Bug that I thought we should make cookies this weekend, she got a funny look on her face and said like Cookie Monster mumma? Come back cookie, cookie come back. {In full Cookie Monster voice of course!} Those of you with preschoolers may know the song. Those who don’t … never mind. Otherwise it will be in your head for days. Trust me on this one.

Inspired by this recipe, we did our usual and amended it ever so slightly.

To make our cookies gluten-free, in place of the rolled oats we used quinoa flakes and replaced the wholemeal flour with 1.5 tablespoons of buckwheat flour and 1.5 tablespoons of besan {chickpea} flour. We also used almond milk in the recipe, and did end up adding in some maple syrup, but only 1.5 teaspoons. In reading a lot about the superfood Maca so added some raw powder {1 teaspoon} to these cookies!

I had to include this photo of Bella and Beary, who were so very excited at the smell of freshly baked cookies cooling, yet so obviously disappointed to find out they were not pup pal friendly cookies.

I had better make a batch of these today to make it up to them!
